Our barrel vanilla has a distinctive taste that was created especially for Cuckoo Ice Cream. Two types of vanilla, bourbon vanilla from Madagascar and noble flowery vanilla from Papua New Guinea, mature in barrels.
Our vanilla is not sweet, it is strong and spicy with notes of anise and tobacco. It is different, new to many palates and, above all, completely pure. That’s why it pairs so well with cuckoo ice cream. We obtain this elegant and harmonious barrel vanilla from our partner in Germany. Here, the vanilla raw material is developed into an exclusive Cuckoo blend.

High-quality vanilla has become increasingly rare in recent years. The traditional trading company Wollenhaupt maintains close relationships with farmers in growing countries. This ensures that Cuckoo’s central requirements are always met: consistent quality of raw materials, sustainable production and fair remuneration for everyone involved in the production process.
In Cuckoo Ice Cream, we use a special blend of barrel-aged bourbon planifolia vanilla and Tahitensis vanilla from Papua New Guinea. The flavor profile combines a complex bouquet of woody, rum and fruit flavors with floral notes and a spicy anise aroma as well as a touch of tobacco. In our vanilla ice cream, this extraordinarily intense vanilla aroma is perfectly brought to life by the Swiss whole cream and whole milk.

Awareness of the quality of vanilla production has suffered in recent years. Rapidly rising prices on the global market triggered premature harvests – the aroma of the vanilla beans fell by the wayside, as the precious pods only developed their characteristic taste in the last eight weeks before the harvest. For Cuckoo Ice Cream, we went looking for the best vanilla – and we found it! Constant control of the quality of raw materials is essential at all stages of barrel cultivation. Only natural ingredients, water and alcohol, are used during the gentle extraction process. The vanilla extract then matures in American oak barrels for several months. This creates the natural, special barrel note that makes our vanilla blend so distinctive.
