At Cuckoo, we only use SHG coffee beans for our coffee ice creams. SHG stands for Strictly High Grown. Coffee which is located at an altitude of 1200 m. M. or more grows more slowly and thus develops fruits that are more greedy in flavor. Due to the slow growth, more nutrients are released into the grains and this more nutrients brings a more intense taste. This is further accentuated by the exclusive profile of Swiss master roasters and the special Cold-Brew process with the typical taste of Cuckoo Coffee. We work with Kaffeemacher specialists and Cold-Brew Experts Florian Wicki.



The coffee at Cuckoo Café Cold Brew is grown in Honduras. Arabica beans come from the Montecillos-Marcala region. Different variations of the Arabica beans thrive here in mixed crops. The soil is rich in nutrients and the coffee cherries develop a full aroma. Delicate coffee trees grow particularly well under shade trees. They are therefore also protected from direct rainfall. Kaffeemacher, our buying and roasting partner, processes the beans by hand and in small batches according to an exclusive roasting profile. This ensures the high quality of the final product.

n order to have the strong aroma of pure beans in Cuckoo Ice Cream, we use exclusively Cold Brew coffee. Preparation using the cold infusion method by expert Florian Wicki ensures a very low-acid coffee whose aromas nevertheless develop intensely. By completely eliminating heat when brewing coffee concentrate, the more subtle and charming flavors of the beans also emerge better. The flavor profile of the beans is characterized by crisp acidity, complex, understated sweetness, and fruity aromas. The café’s sommeliers discover not only aromas of orange and tangerine, but also apricots and a hint of subtle peach aromas.
